Coffee Cake Recipe From Home Economics Circa 1971

Home Economics Cooking Class was a class most girls took in Junior High School. As 7th Graders we cooking for the first year. Learning the very basics of foods. We made a simple Square Coffee Cake from scratch that was so easy & yummy.  I saved the recipe for the Coffee Cake and then lost it several years ago. Today I was going threw old papers , pitching, purging. I found it tattered, stained and totally worn out but legible! I scanned and saved as a PDF right then and there.
Recipe is the same but I've added a few hints
If your using
: A dark pan lower the temp from 375 to 350 and up time 5 minutes { to 35 minutes}
: Convection oven change the time baked from 30 to 20 minutes.

This recipe is for a 8 by 8 pan
Bake time is 375 for 30 minutes{ Do toothpick test~ Insert if clean when pulled out it's done}

1 Stick margarine { but use butter!}
1 cup Packed Brown Sugar

1 & 1/2 cups flour
1 & 1/2 tsp Baking powder
1 tsp salt
1 tsp  ground cinnamon

1 egg
1/2 cup milk

In Large bowl { or mixer bowl} Soften 1 stick Butter. Drop the one cup brown sugar in the bowl. No need to mix . Leave this for a moment .
In a sifter
add the
1 1/2 cups flour
1 & 1/2 tsp Baking powder
1 tsp salt
1 tsp cinnamon
Sift this over the top of the butter /brown sugar and Mix ~ BUT your not wanting to blend into anything but a flaky mix. I turned my mix master on and off on low just to mix well the mixture and keep it still crumbly. Now before the next step scoop out 1/2 cup of this mixture and set aside ~ it remaining mix add a well beaten egg & 1/2 cup milk . Mix well ~ till creamy~ Pour into a well greased pan , smooth out and then take that 1/2 cup flaky mixture & sprinkle evenly over the top and lightly press down.
Bake 375 for 30 minutes
